Baked Banana Peanut Butter Oatmeal
2 cups old fashioned rolled oats (certified gluten free oats for gluten free)
1 tsp. baking powder
¼ tsp. salt
1 tsp. ground cinnamon
1 cup milk (dairy or non-dairy)
1 large egg
3 medium bananas, two mashed well with a fork and one sliced
¼ cup natural peanut butter
¼ cup maple syrup
1 tsp. pure vanilla extract
- Preheat your oven to 375°. Grease a medium sized casserole dish and set aside.
- In a large bowl, combine the oats, baking powder, salt, and cinnamon. Add the milk, egg, 2 mashed bananas, peanut butter, maple syrup, and vanilla. Mix well.
- Pour the mixture into the greased dish. Top with banana slices.
- Bake for 20-25 minutes, until your desired consistency is reached.
