Avocado BLT #festfoods Sometimes I just need a hearty sandwich, and my typical go-to is a BLT.  You can never go wrong with smokey bacon, crisp lettuce and juicy tomatoes, all held together by a wholesome, grainy bread.  Besides it being absolutely delicious, it only takes a few minutes to throw together, and it will please the entire family! Plus, I just love when a recipe calls for 6 simple and fresh ingredients, especially when they are items I keep in my pantry on a regular basis!  And today we are making our BLT extra special with AVOCADO!  It may sound weird, but it takes the sandwich to another level, I promise. Avocado BLT But before we get in to avocado details,  we must talk bacon and I just have to tell you all about my favorite kind - Godshall's Turkey Bacon!  Why is it my favorite, you ask?  It is smokey, packed with bacon flavor, and gets nice and crispy, just like regular bacon.  That is why I chose to put it on my BLT today.  I especially love the uncured variety, but any variety will work, even the precooked bacon {which makes for an even quicker lunch or dinner}! So, go ahead and fry the bacon, just like you’d do with pork bacon.  When it’s nice and crisp, it’ll be ready to go on our sandwich. Avocado BLT While the bacon cooks, we can work on the spread for our sandwich.  Surprisingly, it is not mayo!  I know, I know, a traditional BLT has mayo, but I promise you will love the avocado spread so much more!  It provides an extra pop of flavor and gives the sandwich an amazingly creamy and rich texture. Slice open both avocados and remove the pit.  With one avocado, scoop out the flesh and place in a bowl.  Add lime or lemon juice and mash avocado with a potato masher or back of a fork.  With the other avocado, slice it while it’s in the shell, then scoop out the slices with a spoon. To assemble the sandwiches, spread mashed avocado evenly on 4 slices of toasted bread.  Layer with lettuce, bacon and tomato slices.  Top with sliced avocado and the other slice of toasted bread. Avocado BLT And there we have it - a deliciously unique Avocado BLT that is loaded with flavor and healthy fats!  This sandwich pairs perfectly with Eat Well Lime Black Bean Fiesta Salad from our deli and an Eat Well Cookie from our bakery!  Dig in, friends! Avocado BLT

  Ingredients:

  • 2 ripe avocados
  • 1 tsp. lime or lemon juice
  • 8 slices whole wheat bread, toasted (or gluten free bread for gluten free)
  • 4 sandwich-size lettuce leaves
  • 8 slices cooked turkey bacon, cut in half width-wise
  • 8 slices ripe tomato  

 

Directions:

  1. Slice one avocado in half, remove the pit, then slice in to thin strips. Scoop out with a spoon and set slices aside.
  2. Slice other avocado in half, remove the pit, and scoop out the flesh; place in a bowl. Mash the avocado with lime or lemon juice.
  3. Spread the mashed avocado over half of the toast slices and top each with one lettuce leaf, four half-slices of bacon and two tomato slices.
  4. Top the tomato with the reserved avocado slices and the remaining toast slices.
  5. Cut each sandwich in half and serve with Lime Black Bean Fiesta Salad from our deli and an Eat Well Cookie from our bakery.
