Cooking time: 120 minutes
Preheat oven to 325°F. Place roast in shallow roasting pan. Insert meat thermometer into center of the meat. Roast in a 325°F oven for 1-3/4 to 2-1/4 hours. Remove from oven and cover. Let stand 15 minutes before serving.
Glisten with cooking oil to brown or until juice is running clear. Cook indirectly and slowly for the most tender and juicy experience.
